eat apples, cored and cut into 1 cm pieces

white or brown bread (stale is ideal), cut into pieces of about 1.5 to 2 cm

strong vegetable broth

A large handful of coarsely chopped parsley

  1. Heat 1/2 tablespoon oil in a large skillet over low heat. Add the onions and a large pinch of salt and cook 15min, stirring occasionally, until completely softened. Raise the heat to medium, add the sugar and cook for 5 minutes, stirring frequently, until caramelized. Empty into a medium bowl.
  2. Preheat the oven to 190°C (170°C fan) mark 5. Add the remaining 1/2 tablespoon of oil to the pan and lower the heat slightly. Cook celery and apples for 5 minutes, until slightly softened. Add to the bowl of onions and mix in the sage, bread chunks, broth, lots of seasoning, and most of the parsley and cheese. Empty into an ovenproof serving dish.
  3. Sprinkle with remaining cheese and bake for 30 minutes, or until golden and heated through. Sprinkle with the remaining parsley and serve.
